Three coloured carp – a more special dish

The carp, which the fishermen in the Danube Delta also call “an enigma for everyone to decipher”, is a very tasty fish that can be found in almost all the Romanian inland waters, apart from mountain streams. Since it is considered to be the tastiest fish, we should try a carp recipe that is not only flavourful, but also very appealing for the eyes of the gourmands or fish lovers. Apart from the tricolour appearance of the recipe, this dish is also very easy to prepare. For the more picky persons, with Occidental pretensions, it is safe to say that this meal will please them. The red colour is given by the sweet pepper powder, the parsley gives the green colour and the hard cheese gives the wonderful yellow shade. All of these, combined together, form a unique and elegant dish.

Ingredients:

1 carp, 250 g hard cheese, 1 spoonful of sweet pepper powder, 1 bundle of parsley, 250 ml milk, 50 gr butter, 1 full spoonful of flour, salt and pepper.

Cooking method:

First, remove the scales of the fish, then eviscerate it and wash it well. Second, cut it into chunks, season them with salt, black pepper and sweet pepper powder, roll them in flour and fry them.  For the sauce, melt the butter, separately; little by little add the flower and in order to get rid of the lumps, add the milk. Afterwards, let it harden a little bit. In the meantime, take a baking tray, butter it and put the fish in it. At both ends place the sweet pepper powder and grate the hard cheese, whereas the parsley goes in the middle. Finally, add the béchamel sauce and put it in the oven. This dish is served hot and it can be accompanied by a glass of white wine. Enjoy your meal!

People can understand the importance of fish consumption for the body only by emphasizing its nutritional properties. Fish is an important food for a responsable feeding and for this reason it should not be missing from your shopping cart because of its important nutrients.

At the same time, we must report the decline of fish consumption in Romania, compared to rest of the European Union (annual consumption of fish in Romania is of 4,5 kg/person/year, of 10 times lower than the European Union. The largest consumers of fish and fish products are Portugal and Spain, which consume 48 / 45 kg/person/year).
