Fish borsch – the real fish soup

The stories about the fish borsch in the Danube Delta travel just like the legends about the Hungarian goulash. The fishermen in the Danube Delta used to make fires with a thick layer of embers, on which they cooked the borsch. This was the legendary borsch that became part of the tales that they would tell their grandsons. The old, experienced fishermen make the best borsch. Since in the Danube Delta this dish is served in a special manner, we would like to tell you that the fish is served on its belly on a separate tray and if the cook is good, the wonderful, fragrant broth will be accompanied by a few large cloves of garlic. Moreover, the variety of fishes that boil in the cast iron cauldron is also very important, since it gives the incredible smell of the best fish borsch.

Ingredients:

1  kg fish, 1 large onion, 1 carrot, 1 small parsnip, 1 small celery root, 2-3 ripe tomatoes (or tomato sauce), 1 small cup of rice, 2 spoonfuls of oil, salt, borsch, lemon juice, parsley.

Cooking method:

First, remove the scales, the intestines and the gills of the fish, then wash it and cut it into medium-sized pieces. Second, peel the vegetables, wash them and either chop them or grate them. Afterwards fry the vegetables a little bit in the two spoonfuls of oil and a few spoonfuls of water. After the vegetables have softened, add 3 litters of water and let them boil for 10-15 minutes. Then add the chopped tomatoes and the borsch (depending on how you like it). Let it all boil and then add the clean rice, the pieces of fish and let it simmer for another 10-15 minutes. You can improve the taste by adding a bundle of chopped parsley. The borsch is ready. Have a nice meal!

At the same time, we must report the decline of fish consumption in Romania, compared to rest of the European Union (annual consumption of fish in Romania is of 4,5 kg/person/year, of 10 times lower than the European Union. The largest consumers of fish and fish products are Portugal and Spain, which consume 48 / 45 kg/person/year).
